Everybody likes rice krispie treats. But you want to know how to make them extra-yummy? The secret ingredient is cake batter… I have made these twice since finding the suggestion last week, both times to rave reviews. I used Funfetti cake but I think they’d be yummy with all sorts, plus a drizzle (or thick layer) of chocolate on top and you’re ready to go. The second time I made them we went plain jane, no topping, but we did cut them into fun shapes with cookie cutters, like airplanes and dinos and muscle cars, so I guess that was something…
Cake Batter Rice Krispie Treats
(adapted from Mel’s Sweet Life)
Ingredients:
4 Tbsp. butter
1 (10-oz.) bag mini marshmallows
1/3 c. powdered cake mix (I used Funfetti cake mix)
6 c. Rice Krispies cereal
Rainbow sprinkles (or anything else you want to toss in there)
Chocolate, for melting (optional)
Coat a 9×13 pan with cooking spray and set aside. Melt butter in a large saucepan over low heat. Add marshmallows and stir until also melted. Stir in cake mix until combined.
Add cereal and stir until coated. Stir in some sprinkles or your other goodie of choice (mini chips, toffee bits, dried fruit or nuts; go crazy!)
Spread the rice krispie mixture into the prepared pan. An optional addition is to put some sort of chocolate a microwave-safe bowl and melt it nicely in the microwave. A little (for drizzling over) or a lot (to spread thickly on top) Sprinkle with more candy/sprinkles/nuts/etc., and allow to set. Then cut and gobble them up!
